Day 260 - Waffles

There is a little Belgium waffle shop downtown that makes authentic Belgium waffles. (I have posted about them before) We simply love them. But over the years we have been going there, the prices have slowly gone up, not to mention it is out of the way. So in an attempt to recreate their divine goodness, we have begun our "waffle quest", to find a recipe that most resembles our favorite guilty pleasure. Attempt number one: Tasty, rich, but overwhelmingly buttery (husband used 2 sticks of butter!) Must keep looking. If you know of a good one (one that requires rising the dough), send it my way.

  1. I have a recipe that I really like. The fat in it comes from bacon grease. YES - bacon grease!

    Waffles:
    2 C. Flour
    3 T. Sugar
    2 tsp. baking powder
    1/2 tsp. salt

    Combine ingredients in bowl.

    Next, separate two eggs. Using a mixer, whip the egg whites until peaks form. Add two egg yolks to flour mixture. Add 1 and 3/4 cups milk. Add 6 T. bacon grease. Mix well. Then, fold in egg whites. This usually makes 8-9 waffles - the deep belgian maker square kind.
